Maple “Bacon” Waffles

Today you will learn how to make Maple Bacon Waffles. We will be macing the bacon from scratch with coconut pieces. And the waffle batter is super easy to throw together!

Waffles
 200 g All Purpose Flour
 2 tbsp Sugar or sweetener
 1 tsp Salt
 1 tsp Backing Powder
 ½ tbsp Cinnamon
 1 tbsp Veg or Coconut Oil
 400 g Plant Based Milk
Coconut Bacon
 50 g Coconut Shavings
 2 tbsp Soy Sauce
 1 tsp Liquid Smoke
 1 tsp Smoked Paprika
 1 tbsp Maple Syrup
 Salt to taste.

PREPPING THE WAFFLE BATTER

In a mixing bowl, combined all the ingredients
and whisk until the batter is smooth

If the batter seems to thick, dilute with more milk.
Set aside.

COCONUT “BACON”

In a small container, combine all the ingredients except for the coconut. Mix until all is well incorporated.

Taste and add salt if necessary. Add the sauce to the coconut shavings and mix until all the pieces are evenly coated.

Place in a oven proof container and spread out evenly. (I used a bread pan)

Place in pre-heated oven at 180 for 10-15 minutes stirring every 5 minutes. Once it looks like all the sauce has been absorbed, it should be done.
Remove from the oven and let cool.

COOKING THE WAFFLES

Get your waffle iron to working temperature. Lube the iron up with some spray and cook or brush some oil or butter on to prevent sticking.

Scoop about 1/2 a ladle of batter into the waffle iron and close.
Cook until golden brown. Roughly 2-3 minutes.

The waffles are best fresh out the iron. They tend to go a bit soft when they stand for a while. Melt some butter on those bad boys, drench with maple syrup and top with “bacon”
Try not to eat your fingers too....
