Banana Muffins

These vegan banana muffins are so simple to prepare and have such a deliciously decadent flavour that I am sure they will become a family favourite. It is our go-to recipe when we have any over-ripe bananas lying around

Banana Muffins

 225 g Plain flour (or use Self-raising flour and reduce the Baking powder to 2 heaped tsp)
 2 tsp Baking powder
 100 g Brown sugar (or coconut sugar for refined sugar free)
 3 tsp Cinnamon or mixed spice
 3 large overripe (black) bananas, mashed
 75 g Vegetable oil
 50 g Dried fruit or nuts (optional)

Pre-heat oven to 200 degrees Celcius

Mash the peeled bananas with a fork

Mix well with oil and sugar

Add the flour, baking powder and cinnamon, and combine well

Add any additional ingredients

Baked in a greased muffin pan for 15 minutes, before checking

Bake for another 10 minutes (approximately)

Allow to cool a little before cutting and adding butter or margarine

They are delicious freshly baked but even yummier when they go a little gooey the next day!
